Chili Ready to Cook Overnight in the Crock Pot
We were given a crock pot for Christmas, and were so excited to try our hand at making some homemade chili. Some of the great things about homemade chili are it’s so easy and inexpensive to make, it saves really well (and actually gets better as it saves), and it can be healthy as well. There’s lots of variations, but the following is a sample of what we like to make at home.
1 Can of Pinto Beans
1 Can of Black Beans
1 Can of Kidney Beans
1 Large Onion, Chopped
2 Green Bell Peppers, Chopped
4 Large Cloves of Garlic
1 Large Jalapeno, Chopped
4 Chopped Tomatoes (or a large can of tomatoes works just fine as well)
2 Chicken Chorizo Sausage
(We’ve also used lean ground beef, leftover steak, leftover rib meat, any kind of meat)
Cumin, Cayenne, Chili Powder (all seasoned to taste, roughly 1tsp – 1tbsp)
Salt and Pepper to taste
1 Bottle of Dark Brown Ale
Put all your ingredients in a crock pot, mix well, and let it cook! I like to let it cook, chill, then cook again before eating. I always make up a batch of cornbread (put extra honey in the mix!) to go with it. Such good comfort food during the winter!
