Eggs Benedict… Sortof
I am a huge lover of eggs benedict. Whenever we’re out for breakfast and I see it on the menu, it takes an exceptionally tempting dish to get me to order anything else. I especially get excited when I see it done a little differently. This morning I was inspired, and wanted to give it a shot.
I’m trying to be better about using what we have in the house and not running to the store for something for every meal. This has actually helped me be more creative. I was wanting eggs benedict, but we had no english muffins, no bread for toast, no croissants, etc… I thought, “What about biscuits…?” Now, I’ve never made biscuits, but I hear they’re not hard at all. I can do this.
I found a basic biscuit recipe and got started. I mixed all my dry ingredients together and cut the cold butter into the flour mixture. Blend well with a pastry blender, until the butter is crumbled in and it looks like coarse meal.
Once the flour and butter are all mixed in well, add your milk and egg and mix until just combined. The recipe warned that overworking causes the biscuits to be doughy and tough, so I was careful to just mix it enough to make sure everything was combined well.
Once it’s combined, roll it out on a floured surface about 1/2″ thick and cut with a floured cutter. I didn’t have any cookie or biscuit cutters, but a drinking glass worked perfectly. :)
I laid the biscuits out on a cookie sheet with a liner and used the leftover dough to make some frankenstein-pull-apart biscuits too!
Bake them at 400 for about 15-20 minutes - lovely!

Now, we didn’t have any bacon or ham on hand, but we did have some proccuitto. Josh crisped some up in the pan, and it turned out wonderfully! Crisp and salty and delicious.
And finally, for the hollandaise. Now, homemade biscuits for the first time was enough for me this morning. No homemade hollandaise for me, sorry. Simply Organic makes a sauce packet that we tried for the first time, and it wasn’t bad. Spoon some of that over the pile…
It was wonderful. The hollandaise didn’t really taste very… hollandaise-y, but as a sauce in general it was alright. The proccuitto was rich enough to be spread out over all the biscuits, and as I type, Josh and I are back in bed on this lazy Sunday morning, digesting our breakfast and seriously contemplating a nap. Lovely.

Ooooh, forgot to mention! Kingfish Cafe (http://www.chakulablog.com/restaurants/kingfish-cafe/) has crab cake eggs benedict that is truly decadent! Brunch menu. Looove it.
