The Spread

The Spread

Our friend, Jenn, was getting married. Emily was throwing the shower. Emily is a fellow foodie, inspiring cook, and lover of fancy things. You know this is going to be good.

Emily had made a gorgeous spread of and mocktails. She had a tower of croistini with bruschetta and shaved parmesan…

But the star of the show were the finger salads. I will quote Emily on her beloved creations: “Yes, you are actually looking at bit-sized pieces of lettuce lovingly wrapped around a cucumber spear and shaved carrots, tied with a sliver of green onion and drizzled with sesame ginger dressing. Yes. That is what you are seeing.

I’ll let your eye linger on the beautiful salads for one moment longer…”

Genius - and Tasty - Idea!

Despite the glorious finger salads, I think my favorite part of the night were the creative mocktails.

There was Sparkling Lemonade with Fresh Ginger entitled The Vixen - a little sweet, a little sour, a little spicy.

And everybody’s favorite, Sparkling Limeade with Fresh Lime and Mint - the Virgin (until October 18th) Mojito. I love it.

The most delicious of the four mocktails was definitely the “Honeymoon on the Beach” which is really easy. Equal parts sparkling apple cider and peach nectar. Done.

The Mojitos were really good too, but they are best made to order as the lime gets a little bitter if it sits in the drink too long. I mixed up a can of limeade concentrate with sparkling water and then mixed in crushed mint leaves and lime wedges.

One of my all-time favorite ways to dress up simple water is to let a few limes and cucumbers (twice as many cucs as limes) sit in a pitcher of ice water. It tastes really fresh and a little unusual.

The hibiscus flowers can be purchased on Amazon.com: http://www.amazon.com/Wild-Hibiscus-Flowers-Syrup-8-8oz/dp/B000QFPY8C/ref=sr_1_1?ie=UTF8&s=hpc&qid=1225242453&sr=8-1. Just add them to any sparkling beverage. I brewed a little Tazo Passion Tea and added it to some sparkling water then added a hibiscus blossom.

    Have fun!
