Fish Tacos
Fish Tacos are a favorite of ours. And of course, with the tiny window of summer that we get around here, if you want to grill, you’d better do it now. So, for the first time, we tried making fish tacos on the grill….
Josh took care of the outdoor cooking - fish and tortillas, and I took care of the indoor - sauteéd veggies and garnishes.
Josh makes amazing fish tacos. It’s a favorite around here. We use a basic white fish (tilapia is a favorite), and flake it in a cast iron pan as it’s grilling. We usually toss in some lime juice, salt, and spices - cayenne, chili powder, and maybe some cumin. Sometimes we just do lime and salt, and it turns out wonderfully.

Inside, I chopped and sauteéd some veggies - red bell peppers, onions, garlic, and zucchini. I also added the lime and spices while it was cooking.
This evening, I was trying to be creative with what we had in the house (and eat healthy), and sadly, that meant no sour cream. BUT I had a genius idea. Homemade tzatziki sauce. The simplest, most delicious sauce in the world. I spooned out some nonfat plain yogurt, finely chopped some cucumber and garlic, added salt and pepper, and that’s it! Start it at the beginning of the process, and let it sit in the fridge until dinner’s ready, and you will be so happy you did. Now, traditionally, this is a Greek sauce. But for some reason it just sounded good on tacos tonight. I know, you can be skeptical. Josh was too. Until he tried it. :) It’s a great addition to tacos, and a healthy, flavorful alternative to sour cream.
I had some leftover pico de gallo that I had saved from the night before. I added the lime juice and cilantro (best added the day you’re going to use it), and we were set!

I think I remember back in the day making fish tacos for Josh. Hmmm. Hey, another SIMPLE way to make decent fish tacos using SALMON is to buy the Salmon burgers from Costco. Place the burgers in a pan with some hot olive oil and seer each side to a crisp. Then break up the burgers into like hamburger meat style. Add just a TOUCH (and I mean VERY little) of Sesame oil, Kosher Salt & ground pepper. Get some good quality corn tortillas and use to to wrap your taco. Place salmon in the taco, top with shredded cabbage, Greek Tzatziki sauce (or make your own with greek yogurt, dill, chopped cucumber, salt, pepper), & small amount of fresh pico de gallo.
Very yum!

Rob - Mmmmm…. Salmon fish tacos. Very Yum. We had amazing salmon tacos at a little place in Mukilteo - I need to go again and write a review! Or better yet, have us over to your place and we’ll make them! 2 reviews! :D
We buy our tortillas at TJ’s - there are all of 3 ingredients. Corn, salt, lime. Maybe water too. Then that would be 4. At any rate, you can pronounce all of them, which you can’t say for most tortillas out there. I want to try my hand at homemade ones sometime….
