Grilled Pork, Veggies and Wild Rice

Basting Pork Tenderloin in a Coconut Mango Curry
We’re not usually big fans of pork, but while we were shopping one afternoon at Central Market, the sample that was being served was delicious. Inspired by both the taste (and the price – about $3 for a package of 4), I bought a package of pork tenderloin for the grill.
We had some delicious simmer sauces from Elki (which can be found at Central Market as well), and tried the coconut mango curry with the pork. We just marinated the meat in the sauce for about 10 minutes of so, and seared it over the hot coals on the grill. (Side note: We use Cowboy Charcoal – all natural, no chemicals, and it looks like and gives the flavor of real charcoal. Not fake briquets. We found it at Trader Joe’s.) Just sear on both sides for about 2-3 minutes, then put them in the cooler section of the grill for another couple of minutes. The middle of the meat should be slightly pink, but not raw looking.
For the veggies, we cut up some green beans, green peppers, onions and garlic. I tossed them with a bit of olive oil, salt and pepper (coarse ground for both!), and sautéed them over a makeshift pan of tin foil. The onions browned nicely, and it smelled so good, I know all the neighbors wanted to come over for dinner….

We topped the veggies off with some fresh basil from our herb garden a couple of minutes before it was done cooking, and we’re done! Serve it up with some wild rice cooked in chicken broth and some diced onion added in while it cooks…. yum.
