Mediterranean Fried Rice
This simple fried rice is so easy – I use Near East rice pilaf in curry, and add fun things to flavor it. I like the Near East brand because even though it’s a simple packaged rice pilaf, you can pronounce all the ingredients – it’s 100% natural, tastes great, and is incredibly easy to cook.
1 box of “Near East” Curry Rice Pilaf
1 Red Bell Pepper, chopped
1 Zucchini, chopped
1 Small Yellow Onion, chopped
12 Marinated Artichoke Hearts, chopped
Start the Rice Pilaf according to the instructions on the box. While that is cooking, saute the vegetables and artichoke hearts in a pan until tender. Once the rice is cooked, add the rice to the vegetable mix and continue to saute until all the flavors are combined. Enjoy!
As I was making this, I was thinking that next time I would add slivered almonds and raisins to the rice… I think that would be a good combination as well.
