Mediterranean Fried Rice

This simple fried is so easy - I use Near East pilaf in curry, and add fun things to flavor it. I like the Near East brand because even though it’s a simple packaged pilaf, you can pronounce all the ingredients - it’s 100% natural, tastes great, and is incredibly easy to cook.

1 box of “Near East” Curry Pilaf
1 Red Bell Pepper, chopped
1 Zucchini, chopped
1 Small Yellow Onion, chopped
12 Marinated Artichoke Hearts, chopped

Start the Pilaf according to the instructions on the box. While that is cooking, saute the vegetables and artichoke hearts in a pan until tender. Once the is cooked, add the to the vegetable mix and continue to saute until all the flavors are combined. Enjoy!

As I was making this, I was thinking that next time I would add slivered almonds and raisins to the … I think that would be a good combination as well.
