Pasta, Veggies, and Sausage

This one is such a simple comfort dinner for us. It’s a classic, one I make frequently.

I start out with some good chicken sausage from Trader Joe’s (there are several different varieties), and slice it fairly thin. I saute that in a pan until it’s browned a bit, then add in some chopped veggies – this batch had zucchini, green peppers (red are way too expensive right now!), and saute until they begin to soften a bit. Then add in some sliced onions and garlic (they cook quicker and the garlic will burn easily), and cook until the onions start to caramelize. Lastly, we added some chopped tomatoes, artichoke hearts, and sliced olives – kalamatas or garlic-stuffed are good. Stir it together until the tomatoes are softened and it’s all hot, spoon it over pasta, top with feta, and a good jarred or fresh pesto, and you have an amazing comfort food meal that’s quick and (relatively) healthy! I’ve discovered the tortellini in the bulk foods section of Central Market, and have used that as the pasta the last couple of times, and we really like it. In the background is a glass of juice mixed with sparkling water – very refreshing!
