Sausage & Kale Soup
As the weather continues to turn cooler, I’ve been finding myself craving soup more and more. I had an abundance of kale, a rutabaga and some good sausage. I could think of nothing better to do with it than make a soup.

I started out with some lovely homemade frozen stock and thawed that in the stockpot while I set about chopping up the ingredients. This one was fairly simple. Just roughly chopped kale, diced rutabage, diced onion, and some cooked sausage. I skinned the sausage first and scrambled it up as I cooked it, so it would be in tiny little bits throughout the soup. The stock had some leftover bits of turkey in it, which gave it a nostalgic Thanksgiving flavor. I think I am sufficiently ready for fall now.
