Vegetarian Breakfast Sandwich
Weekday breakfasts consist usually of cereal and if we’re really lucky and running on time, a piece of toast. Weekends, therefore, call for something a bit more luxurious.

I typically crave savory over sweet in the mornings, and this morning I was craving a good breakfast sandwich. I love breakfasts that require very little effort, and this one is no different.
I had a few tomatoes and some spinach from our CSA and chopped those up in some rough chunks. Beautiful eggs (a total of 4) were beaten with a bit of S&P and poured into a hot, lightly buttered cast iron skillet. Pile in the spinach and tomatoes, scramble them all up together and plop the bed of goodness onto some toasted bread – spelt in our case.
