For Valentine’s Day this year, Josh and I went to Cherry Blossom, a local sushi restaurant in Everett. We’ve been there a few times before and have always enjoyed it.

This evening it was busier than usual, but we were still seated quickly. Our table was in a quiet little raised corner, near the sushi counter. We were brought edamame and miso soup right away, and given a few minutes to look over their extensive menu. They offer several kinds of appetizers, anything from gyoza for the mainstream to seasoned baby octopus with seaweed salad for the more adventurous. They have several kinds of sunomono (Japanese salads), donburi (a bowl of rice served with a variety of toppings), plates of teriyaki, bulgogi, bento boxes, yakisoba and of course, the makizushi and nigirizushi.

I am admittedly a non-adventurous sushi lover. I usually scorn Americanized ethnic food, but I’m still working to acquire a taste for anything more than California Rolls when it comes to sushi. Josh on the other hand, loves it all, but graciously accommodates me. Tonight, we decided on a couple different kinds of rolls, and my favorite, a Stone-Pot Bibimbop ($8.50).

So we started digging in before we realized we hadn’t taken a picture of it yet – that’s how good it is! The dish is brought out in a hot iron pot, filled with rice, meat, all sorts of vegetables – bean sprouts, carrots, mushrooms, spinach, and a few other “nutritious things” I’m not sure how to identify. On the top, an egg is laid, and on the side is a dish of kimchee and a bottle of kochujang (Korean hot sauce). The stone pot continues to cook the rice crispy and brown, and keeps the other ingredients nice and hot. Everything is mixed together and enjoyed – it’s wonderful!

Tonight we ordered Cherry Blossom Rolls (deep fried roll with Alaskan king crab and avocado – $12), Crunchy Rolls (shrimp tempura, avocado, cucumber, hot mayo sauce and crunchy tempura bits on top – $8), and Rock and Roll (yellowtail, cucumber, green onion, and flying fish roe – $6.50) They were all wonderful!

The service here is great and the staff is very friendly. We’ve never had a disappointing experience here, and recommend this restaurant to anyone.
