I love Spanikopita. Josh hates spinach. What’s a girl to do? We stumbled upon Hirotiropita, a variation of Spanikopita but made with shredded pork and veggies… that got me thinking. So what did I do? Take a great dish, tear it all apart and make it my own of course!

I have to start out by saying that my dad is a great cook. Both of my parents are. My mom does the comfort food, my dad does the “cool” food. The grilling, the seafood, the curries, the sushi. I think I got my love of good, creative food from my dad. One of my favorite ways to spend time with my dad is to cook with him. So when we got the invitation to come over and grill some lamb… how could I say no?

Mediterranean Quinoa Salad
I came across a recipe similar to this, tweaked it to suit my tastes, and every time I’ve made it, it’s been amazing. It’s quick and easy, incredibly healthy, and makes plenty. It saves well too, so leftovers are a hit! Quinoa is a grain from South America, and I usually buy it at Trader Joe’s. It’s inexpensive, very nutritious, and cooks just like rice. Baklava
I am not a baker. I enjoy cooking because of it’s creativity and lack of rigidity. You’ll notice most of my recipes are a bit vague and leave lots of room for play! This recipe, however, is so worth the “baking” precision I usually avoid. I found the original in a cookbook, and played with it, tweaking it a bit every time, until I came up with this final result. Mediterranean Fried Rice
This simple fried rice is so easy - I use Near East rice pilaf in curry, and add fun things to flavor it. I like the Near East brand because even though it’s a simple packaged rice pilaf, you can pronounce all the ingredients - it’s 100% natural, tastes great, and is incredibly easy to cook.
