Indian 101
Last night I went to Pacific Culinary Studio for an Indian cooking class. I’ve tried my hand at some Indian cooking a couple of times, but overall it’s mostly eaten at great restaurants. Now I have a whole collection of recipes to make!
I’ve taken classes here before, but this was my first hands-on class. I really appreciate how you always get a packet full of the recipes you’re making (or watching being made, if it’s a demonstration class – yes, you still get to eat at those too!), plus plenty of notes. I’ve taken home my favorite French Toast recipe from a breakfast class I took here once.
Anyway, this evening I attended the class with a couple of girlfriends of mine, and the place was packed! We listened to Julie Little talk about various spices, ghee, what is and isn’t curry, where to get great staples at discount, etc… Then we split into teams and started tackling some of the recipes. Pork Vindaloo, Everyday Dahl, Tandoori Fish, Orange-Cucumber Raita, Creamy Chicken Curry, and Lamb Biryani were among several dishes on the menu.

At the end of the night, we loaded plates, sipped some wine, and enjoyed the fruits of our labor. Love it.
